Some use malted grains, some unmalted. Some use barley, some use rye, some use corn, some use wheat. Some use all of these. Some dry the malt over a peat fire. Some use brand new oak barrels, some use barrels that impart the flavor its previous occupant – like wine, port or sherry. Some are light, some are heavy, some have sweet caramel flavors, some have crisp honey. Some are tart apple and citrus, some are rich apricot and plum.

American Bourbon
Bourbon is the quintessential American whiskey. Though most come from Kentucky, they don’t have to. Legally, Bourbon must be made from at least 51% corn, the rest consisting of rye, wheat or barley. The whiskey must be aged in new charred oak barrels for at least 2 years. The barrels are then sold to wineries, breweries, or other non-bourbon whiskey producers. Unless otherwise indicated, the Bourbons below are produced in Kentucky.

Single Malt
Single Malt whiskies are made from 100% malted barley and from one distillery, distilled in batches in pot stills. They are typically aged in former bourbon barrels, but may be aged in any type of oak barrel (wine, port, sherry etc.).
